Chipotle Burger with Chipotle Mayo

Chipotle Cheeseburger:

2 pounds ground beef
6 canned chipotle chiles in adobo sauce, minced
1/2 cup cilantro, chopped
2 cloves garlic, crushed
1/2 cup onion, minced
1/2 teaspoon salt
Sliced Monterey Jack, Cheddar, or Colby cheese to top burgers

Combine everything but the cheese in a bowl and mix using your hands. Form into burgers (approximately 6 burgers) and let them chill in the fridge for an hour. Grill burgers on a medium heat grill. Top with cheese and allow it to melt before you remove them from the grill. Serve with Chipotle Mayo.

Chipotle Mayo

3/4 cup mayo
3 canned chipotle chiles in adobo sauce, minced
2 tablespoons ketchup

Stir everything together to combine. Serve on Chipotle Burger.
